Here I'll include recipes that I try, modify, and perfect for y'all to try for yourselves.

I'll be including Tags on each post so you can use your browser search function to locate thinks of interest (Dinner, Lunch, Beef, Chicken, etc.)

I don't feel I'm that spectacular at cooking but I've developed some recipes over the years that generally are a hit with my family, and hopefully you all will enjoy them too.

 

Strawberry Sriracha Sauce

Tags: Sauce, Hot, Spicy, Fruit, Sriracha, BBQ

This one is an awesome sweet-heat sauce that makes a great alternative flavor for anything you'd use a sweet BBQ sauce on, Chicken, Pork, etc. Great Cheesecake sauce too...

  • 2 Ibs fresh strawberries, hulled & rough chopped
  • 3 Tbs Water
  • 2 Tbs Apple Cider Vinegar
  • 2 Tbs Brown Sugar
  • 1 Tsp (to taste) Molasses
  • Pinch salt
  • 1Tbs Sriracha Sauce

Directions:

  1. Hull & Chop strawberries, I used a food processor because my knife skills suck.
  2. Toss strawberries into a saucepan with water, bring to simmer over Medium/Low heat for about 15 minutes
  3. Add Cider Vinegar, Brown Sugar, Salt, and Molasses to taste, simmer an additional 15 minutes to thicken and reduce strawberries.
  4. Remove from heat, use a Potato masher or hand mixer to break up the strawberries and get it more sauce and less salsa.
  5. Mix in Sriracha sauce.
  6. Cool for 10 minutes then transfer to jars to refrigerate
  7. Recommend refrigerating for at least a few hours to allow flavors to marry together while cooling.

Refrigerated this sauce will keep for up to 2 weeks. Enjoy.

Nacho Mac

A fast and simple, if not exactly healthy, take on Cheeseburger Mac for a Southwest kick.

  • 1 Ilb block Queso Blanco Velveeta
  • 1 pint Heavy Cream
  • 1 Ilb Ground Beef/Chuck/Round Whatever. Get ground cow.
  • 1 can Ro-Tel Mild (Or Hot, Or Original, whatever, I'm not your Dad.)
  • 1 cup(ish) Celentani/Cavateppi Twirly-screw Noodles.

Directions:

  1. Cook noodles according to package directions, do this first because it takes 9 years for a pot to boil.
  2. Brown your cow.
  3. Drain cow, give the skillet a quick wipe to clear the worst of the grease out
  4. rough-chop the Velveeta block, add to skillet with Heavy Cream
  5. Heat over medium-high, stirring regularly, until Velveeta fully melts
  6. Add cow back in. Moo like Tauren.
  7. Drain Ro-Tel, add to mixture and stir.
  8. Return noodles to skillet, combine.
  9. Reduce heat to low and simmer, covered, stirring occasionally, for 10 minutes.
  10. Serve with tortilla chips.

 

Kode's White Chicken Chili

Tags: Dinner, Chicken, Slow Cooker, Crock Pot, Southwest, Rice

A name a lot more racist than the dish. This Southwest Chili is simple to make and delicious.

  • 2-3 Chicken Breasts, Frozen, or not, whatever.
  • 1 Can Ro-Tel Tomatoes of choice
  • 1 can whole corn kernel, do not drain
  • 1 can Black Beans, drained & rinsed
  • 1 pkg Ranch Dressing mix
  • 1 Tbs Cumin
  • 1 Tsp Chili Powder
  • 1 Tsp Onion Powder
  • 1 8-oz Block Cream Cheese

Directions:

  1. Put it all in the crock pot.
  2. Cook on low for 6-8 hours, stir once or twice.
  3. Shred chicken at end of cooking time, serve over rice.

Kode's Stupid-Simple Steak Marinade

A quick and dirty Steak marinade from ingredients you probably already have in the pantry.

  • 1/4 cup Soy sauce
  • 2 Tbps Worcestershire sauce
  • 2 clove Garlic, crushed
  • 1 Tbsp Honey
  • 1 Tbsp Brown Sugar
  • 1/4 tsp Onion Powder

Directions:

  1. Put ingredients into sealable container (or bowl, whatever.)
  2. Shake the crap out of container to combine. (Or whisk, if that's your thing)
  3. Peirce steaks, add to bag, pour marinade in.
  4. Marinate 6-8 hours, turning once.
  5. Eat. Cook the meat first.

Kode's Pork BBQ Sauce

Tags: Pork, BBQ, Sauce, Simple, Sweet

Great as a marinade or BBQ glaze, I slap this together and bake some pork chops in it for a delicious entrée.

  • 1 Tbsp Soy sauce
  • 2 Tbsp Vegetable oil
  • 1 Tbsp Worcestershire sauce
  • 1 Tsp Lemon juice
  • 2 Tbsp Brown Sugar
  • 2 Tbsp Ketchup

Directions

  1. Combine ingredients in your favorite mixing container.
  2. Mix how you see fit (shake, whisk, stir)
  3. I pour half over the chops and bake, then turn and pour the rest.
  4. Enjoy, nerd.

Tailgating Chili

One of my many chili recipes, this is extremely hearty and will feed a family for a couple days at minimum.

  • 2 Ilb Ground Cow
  • 1 Ilb Italian Sausage
  • 3 can (15 oz) Chili beans, drained
  • 1 can (15 oz) Chili beans in spicy sauce
  • 2 can (28 oz) diced tomatoes
  • 1 can (6 oz) Tomato paste
  • 1 large yellow onion, copped
  • 1 Green bell pepper, seeded and chopped
  • 1 Red bell pepper, seeded and chopped
  • 2 green chile peppers, seeded and chopped (your choice, I chose Anaheim)
  • 1 Tbsp Bacon bits
  • 4 Cubes Beef Bullion
  • 1/2 cp. Beer (Full-flavor Budweiser works great)
  • 1/4 cp Chili Powder
  • 1 Tbsp Worcestershire sauce
  • 1 Tbps minced Garlic
  • 1 Tbsp dried Oregano
  • 1 tsp Ground Cumin
  • 2 tsp hot sauce (I like Texas Pete)
  • 1 tsp dried Basil
  • 1 tsp salt
  • 1 tsp fresh ground black pepper
  • 1 tsp Cayenne pepper
  • 1 tsp Paprika
  • 1 tsp white sugar
  • 1 bag Corn Chips (Fritos, nerd!)
  • 1 bag Shredded Cheese (Whatever yellow cheese is your fancy, I like Kraft's Mexican blend.

 Directions

  1. Heat a large stock pot over medium-high heat. Crumble the ground cow and sausage into the hot pan, and cook until evenly browned. Drain off excess grease.
  2. Back up the dump truck and unload all other ingredients into the pot.
  3. Stir to blend, then cover and simmer over low heat for at least 2 hours, stirring occasionally.
  4. After 2 hours, taste, and adjust salt, pepper, and chili powder if necessary. The longer the chili simmers, the better it will taste. Remove from heat and serve, or refrigerate, and serve the next day.
  5. To serve, lay down a bed of corn chips, pour chili over top, top with cheese. Enjoy.
